Spring is in the air! Flowers are blooming and bright happy colors are popping up all over. So for our sweet treat this week, let’s add a splash of color.

Sweet Surprise Cookies are soft and chewy with a little extra surprise of color hidden on the inside. These fun treats are easy to make and can be used for a number of occasions. Add a rainbow of bright colors for spring and Easter. You could use orange and black for a Halloween treat, or red and green for Christmas. These cookies would also be great as a simple gender reveal for baby showers.
Sweet Sugar Cookies
That fun pop of color is so easy to create with these sweet little cookies. Start with 1 cup of softened Butter and 1 ½ cups Granulated Sugar. Beat these together with a mixer to create a light and fluffy texture. Mix in 1 Egg and ½ teaspoon Vanilla Extract. In a separate bowl combine 2-3/4 cups Flour, 1 teaspoon Baking Soda, 1 teaspoon Baking Powder, and ½ teaspoon Salt. Adding a little of the flour mixture at a time, use a mixer to combine until a creamy cookie dough is formed. This is the base for your cookies and makes an excellent plain sugar cookie on its own.
That Little Something Extra
To add in the extra color filling, in a small bowl measure out ¼ teaspoon of water. Add your desired food coloring into the water, I recommend about 3 drops, but you can adjust this for different affects. Then mix in 1 tablespoon of powdered sugar. It takes a bit of mixing to get this evenly combined; the sugar will tend to stick to the spoon and must be scraped off occasionally. This should make a sticky paste when fully mixed. Then add 1 additional tablespoon of powdered sugar and mix again. If it is difficult to mix with a spoon at this point you can use your fingers.
The powdered sugar will now be a very firm colored paste. You should be able to roll it into balls without it sticking much to your hands. If the paste is too flaky and won’t stick together simply dampen your fingers slightly. That will be enough moisture to make it stick, but don’t add any extra water because the powdered sugar is very sensitive to it and will turn runny fast!
Grease your cookie sheet and set your oven to 350 degrees. For each cookie roll a small ball of the colored sugar paste. Then take a spoonful of cookie dough and push the ball into the center. Close up the ends around it and place on the cookie tray. To make different color cookies repeat the process of creating a colored sugar paste and alternate the colors used inside each cookie. When your tray of cookies is formed bake at 350 degrees for 5 to 7 minutes. Transfer to a wire rack and let cool. Then surprise your kids, family, or friends with this sweet treat!

Food Coloring
Cream butter and granulated sugar with mixer. Mix in egg and vanilla extract. In a separate bowl combine flour, baking soda, baking powder and salt. Mix dry ingredients in a little at a time. In a small bowl, combine water and food coloring. Mix in powdered sugar 1 tablespoon at a time until evenly combined. Roll the colored paste into a small ball and press into a spoonful of cookie dough, sealing the dough around it. Place on a greased cookie sheet and bake at 350 degrees for 5 to 7 minutes. Transfer to a wire rack for cooling.
